Traditionally, sweet treats for the Christmas season are various puddings, pies, trifle and cheesecake. This is the recipe for a slightly different Christmas pudding. It is made from basic ingredients, but is delicious and looks good. And it is very easy to make – just combine dried fruit, apricots, cherries, and brandy with custard and whipped cream and froze. Dried fruit is used by regular cake-makers and steamed pudding fans. It can also be added to mincemeat. However, most recipes benefit from controlling the proportions of the different dried fruits. It is a real treat that is, with its look, an excellent choice for cold, snowy Christmas Eve.
175 g mixed dried fruit
60 g ready-to-eat dried apricots, chopped
60 g glacé cherries
3 tbsp brandy
125 g caster sugar
450 ml milk
450 ml double cream
150 ml single cream
1.75 l pudding basin

In a large bowl, whisk together the eggs and sugar. Heat the milk in a heavy saucepan to just below boiling point. Pour into the egg mixture, stirring.
Pour back into the pan. Cook gently, stirring with a wooden spoon, until the froth disappears and the mixture thickens. Do not boil. Remove from the heat and leave to cool.
Whip 300 ml double cream and the single cream together until they are just beginning to hold their shape. Fold into the custard with the fruit and brandy mixture.
Turn into a shallow freezerproof container and freeze for 2 hours or until beginning to set but still slightly soft.
Remove the pudding from freezer and mix well to distribute the fruit evenly. Spoon into the pudding basin, cover, and return to the freezer. Freeze for 3 hours or until firm.
remove from the freezer about 20 minutes before serving to soften. Turn out onto a serving plate, and spoon the remaining cream, lightly whipped, on top. Slice and serve at once.
